Antipasto Platter

It sounds like a nasty word, but it really just means “before the meal” in Italian. You can get creative with whatever Italian meats, veggies or cheeses float your gondola.

Makes 8-10 servings
Prep time: 20 minutes

Jar of roasted red peppers
Cherry tomatoes
Grilled eggplant
Marinated mushrooms in a jar
Green and/or black olives
Marinated artichokes in a jar
Sun-dried tomatoes in a jar
Assorted Italian cheeses, such as Mozzarella, Parmesan, Fontina or Provolone
Assorted Italian cold cuts such as salami, pepperoni or prosciutto

Arrange all components decoratively on a large platter. Serve with breadsticks or bruschetta and a red-wine vinaigrette if desired.
